Strawberry Muffins

1/2 cup butter or margarine, softened
1/4 teaspoon salt
1 cup sugar
1/2 cup 2% milk
2 eggs
1 teaspoon lemon extract
2 cups all-purpose flour
1 cup fresh strawberries, chopped
1 1/2 teaspoons baking powder
1 tablespoon cinnamon sugar

Cream butter; gradually add sugar and eggs; cream until light and fluffy. Sift together flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Add lemon extract, and gently fold in strawberries.

Spoon batter into well-greased muffin pans, filling two-thirds full. Sprinkle with cinnamon sugar. Bake at 375 degrees for 15 to 18 minutes.
